We were sitting around together playing a board game and my nephew (age 6) asked for a snack.

I asked him if he wanted to try my new sugar cookies and he said
"Yeah, I'll tell you if they are as good as mom's".
I chuckled a little and handed him a cookie.
His eyebrows went up and he said "YUM"... chew...bite...chew...
"These like...melt in your mouth"....

"Can I have another?"

Your New Favorite Keto Sugar Cookie
To get the perfect keto sugar cookies, use high-quality ingredients and follow the instructions exactly.
Use Refined Coconut Oil unless you want a coconut flavor to your keto sugar cookies. Refined coconut oil has been deodorized and doesn't have any coconut flavor.
Also, make sure you line your cookie sheets with parchment paper. These cookies are very soft when they come out of the oven and would be very difficult to remove from your cookie sheet. The solution is to use parchment paper to line your cookie sheets!
This way, you can slide it right onto your counter and let the cookies cool to room temperature there!

Ingredients for Keto Sugar Cookies
Here are the keto ingredients you'll need to make keto sugar cookies:
- Refined Coconut Oil
- Grass-Fed Gelatin Powder
- Almond Flour
- Bocha Sweet (Seriously, you need this!) If it's out of stock you can try… Swerve or Monk Fruit
- Pure Vanilla Extract
- Almond Extract
- Parchment Paper
Why Bocha Sweet?
Bocha Sweet is my favorite super food sugar alternative.
It tastes and looks like real sugar and doesn't have that tinny or metallic aftertaste so many of the other alternative sugars have.
PLUS, it's a super food in it's own right. Bocha Sweet is made from the extract of the Kabocha pumpkin which has been a super food staple of the Japanese diet for a very long time.
It boasts a lot of good-for-your body benefits. Especially if you are diabetic or suffer from metabolic syndrome. Look up the health benefits of pentose and you'll learn a lot more. Pentose is the extracted compound you find in Bocha Sweet.

Ingredients
- 1 cup Coconut Oil 209g, softened
- ½ cup Granulated Sugar Substitute (Bocha Sweet or Monk Fruit)
- 40 drops Liquid Stevia
- 1 teaspoon Vanilla Extract
- ¼ teaspoons Almond Extract
- 1 Tablespoon Beef Gelatin
- 1 Egg
- 1 teaspoon Baking Soda
- ½ teaspoon Salt
- 2 cups Almond Flour 224g

Instructions
PREPARE
Preheat oven to 350 degrees.
Prep baking sheets by lining them with parchment paper. Cookies are soft and difficult to handle when they come out of the oven so you'll want to use parchment paper so you can easily slide them off the sheet onto your counter/cooling racks.
Soften your coconut oil so it mixes easily.
MIX
In a large mixing bowl, cream together softened coconut oil, sugar substitute and liquid stevia.
Mix in vanilla extract, almond extract and beef gelatin.
Mix in your egg.
In a separate bowl, weigh out your almond flour. Then mix in salt and baking soda and stir to combine.
Add the flour mixture to the wet mixture and mix until well combined, scraping down the sides of the bowl as needed.
Scoop with a cookie scoop onto your parchment paper lined cookie sheets.
You can roll the sugar cookies in extra granulated sugar substitute if you wish.
BAKE
Bake at 350 degrees for 10-12 minutes until lightly browned.NOTE: Cookies will seem not quite set up in the middle. The cookies will be quite fragile when they come out of the oven. Allow the cookies to cool on the cookie sheet for 10 minutes before using the parchment paper to transfer them to a cooling rack.

- Gather your ingredients & supplies
1 Cup Coconut Oil 209g, softened

Hello there. No, they spread quite a bit, maybe you can try adding more almond flour.
