Keto Sugar Cookie Recipe (1)

These melt-in-your-mouth Keto Sugar Cookies will satisfy your Christmas Sugar Cookie cravings... At least if my 6-year-old nephew is any judge of sugar-cookie awesomeness.

We were sitting around together playing a board game and my nephew (age 6) asked for a snack.

Keto Sugar Cookie Recipe (2)

I asked him if he wanted to try my new sugar cookies and he said

"Yeah, I'll tell you if they are as good as mom's".

I chuckled a little and handed him a cookie.

His eyebrows went up and he said "YUM"... chew...bite...chew...

"These like...melt in your mouth"....

chomp, chomp, chomp

"Can I have another?"

There's not a better compliment!!

Your New Favorite Keto Sugar Cookie

To get the perfect keto sugar cookies, use high-quality ingredients and follow the instructions exactly.

Use Refined Coconut Oil unless you want a coconut flavor to your keto sugar cookies. Refined coconut oil has been deodorized and doesn't have any coconut flavor.

Also, make sure you line your cookie sheets with parchment paper. These cookies are very soft when they come out of the oven and would be very difficult to remove from your cookie sheet. The solution is to use parchment paper to line your cookie sheets!

This way, you can slide it right onto your counter and let the cookies cool to room temperature there!

Ingredients for Keto Sugar Cookies

Here are the keto ingredients you'll need to make keto sugar cookies:

Keto Sugar Cookie Recipe (7)

  • Refined Coconut Oil
  • Grass-Fed Gelatin Powder
  • Almond Flour
  • Bocha Sweet (Seriously, you need this!) If it's out of stock you can try… Swerve or Monk Fruit
  • Pure Vanilla Extract
  • Almond Extract
  • Parchment Paper

Why Bocha Sweet?

Bocha Sweet is my favorite super food sugar alternative.

It tastes and looks like real sugar and doesn't have that tinny or metallic aftertaste so many of the other alternative sugars have.

PLUS, it's a super food in it's own right. Bocha Sweet is made from the extract of the Kabocha pumpkin which has been a super food staple of the Japanese diet for a very long time.

It boasts a lot of good-for-your body benefits. Especially if you are diabetic or suffer from metabolic syndrome. Look up the health benefits of pentose and you'll learn a lot more. Pentose is the extracted compound you find in Bocha Sweet.

PRO TIP: Purchase Bocha Sweet two pounds at a time to save!

What happens if you don't add enough sugar to cookies? ›

When you decrease the sugar in a cookie recipe, you won't just get a result that's less sweet. You'll get cookies that are harder, drier, crumblier, and spread far less. It was also interesting to note that decreasing the sugar also yielded 1 less cookie dough ball.

How many carbs in a homemade sugar cookie? ›

What can I add to sugar cookie mix to make it better? ›

Why are my sugar cookies not hard? ›

But if you roll the dough out too thick, then they won't cook through and become dense and, honestly, pretty gross. The ideal thickness to roll out your sugar cookie dough is about 1/4"--that way, they'll be tough enough to be handled and decorated, but thin enough to stay a little crunchy.

What happens if you don't have enough sugar for a recipe? ›

For basic baked goods like sugar cookies or pound cake, using maple syrup or honey instead of sugar lends the finished product a little extra flavor. You'll need a little less of these sweeteners for your recipe—just ¾ cup of maple syrup or honey replaces a full cup of granulated sugar.

What happens if you don't eat enough added sugar? ›

Why is my sugar cookie mix too dry? ›

To avoid this, try using as little flour as possible while preparing to roll your dough. This can be reversed by adding one to two tablespoons of liquid (water, milk or softened butter) to your mix.

Should you refrigerate sugar cookie dough before baking? ›

What happens if you don't chill cookie dough? ›

Popping your dough in the fridge allows the fats to cool. As a result, the cookies will expand more slowly, holding onto their texture. What is the best thickness to roll sugar cookies? ›

How important is sugar in cookies? ›

Sugar creates texture

Sugar easily binds with water, which accomplishes two main things. 1) It locks in moisture, keeping your baked goods from drying out; and 2) It inhibits the development of gluten which keeps your cookies, cakes and sweet breads softer. Variances in sugar type will create different outcomes here.

What makes cookies fluffy and not flat? ›

Room temperature butter is just the right consistency to incorporate air when it's creamed with sugar. These trapped air pockets result in risen, fluffy cookies. If the butter is any warmer, it won't incorporate enough air and your cookies will have less rise.

What happens if you don't add brown sugar to cookies? ›

Brown sugar adds a dense chewiness to certain types of baked goods like cookies. When brown sugar is replaced with white sugar, you may end up with a slightly crispier result. Still, this isn't necessarily a bad thing. White sugar can be used to replace brown sugar, producing only slight changes in texture and flavor.
